Before we make your taste buds flip, pancake pun intended, let’s discuss the elephant in the room. Some gluten-free products are hit or miss. For instance, I had some gluten-free chocolate chip cookies the other day that just weren’t the business. But I’m here to tell you that you CAN enjoy a good ‘ol stack of flapjacks that taste just as delicious as the real thing. It’s just a matter of choosing the right brand or finding the perfect combination of ingredients!
You can either make your own gluten-free pancake mix or buy it pre-made in stores. I usually purchase a box at Sprouts Farmers Market, Trader Joe’s, or Albertson’s. Your best bet would be your local supermarket or health food store. I’ve tried different mixes throughout the years, from pumpkin to almond flour, but buckwheat is my go-to. I know that different folks have different strokes, so your palette might be a lot different than mine! The fun part about healthy living is finding alternatives to your favorite meals. Experiment, experiment, experiment.
